Look, I love apple crisp for a variety of reasons. It’s cozy, comforting, a little bit nostalgic and much easier to make than homemade apple pie. Plus who doesn’t love the texture component of the perfectly sweet, crunchy topping? It’s everything you could want in a dessert.
I originally made this healthier apple crisp a few years ago and haven’t looked back since. You’d never know it was a little better for you either! I’ve lightened it up just enough for you to enjoy and still feel like it’s something really special coming out of your oven. Warm apples, delicious maple pecan flavor, what more do you need?! What makes this apple crisp healthier?
Instead of using regular sugar like most apple crisp recipes call for, I used maple syrup in the filling. The recipe doesn’t call for much but when all is said and done, it ends up being the perfect amount of sweetness. We’re also adding a boost of whole grains thanks to whole wheat flour, and I’ve included simple ways to keep this recipe gluten free and dairy free (while still being delicious).
Ingredients in this healthy apple crisp recipe
If you’ve never made homemade apple crisp before, you are seriously in for a treat. It only requires a few staple ingredients & spices but the result is absolutely incredible. Here’s what you’ll need to make it:
- Flour: I like to use whole wheat pastry flour for the lovely boost of whole grains, but you can also use regular flour, gluten free oat flour, or almond flour. Options for everyone! If you use oat flour, feel free to make your own right at home, too.
- Oats: you’ll also need some rolled oats (gluten free if desired) for that crunchy topping.
- Brown sugar: we’re sweetening that delicious topping with some dark brown sugar. You can also use coconut sugar to keep the recipe refined sugar free.
- Pecans: hello, pecan oat topping! I love the flavor that crunchy pecans add to the topping.
- Spices: for the entire crisp you’ll just need some cinnamon, salt and a little nutmeg. Fall flavors, ILYSM.
- Butter: a little cold butter helps the topping hold that crumble texture. Feel free to use vegan butter or coconut oil to keep the apple crisp vegan & dairy free.
- Apples: I love using a mix of granny smith or honeycrisp but I’m sure it will work with whatever apples you have available.
- Secret ingredient: the filling also calls for a little bourbon, but you can swap that for vanilla if you’d like. Either way, this apple crisp is going to make your belly (and heart) very, very happy. Learn how to make your own vanilla extract here!
How to make the best healthy apple crisp
- Prep your pan. Grease an 8×8 inch baking pan or a 9 inch skillet with cooking spray, an preheat you oven to 350 degrees F.
- Make the topping. You’ll then want to combine all of the ingredients for the crunchy oat topping. Pour in the butter (or coconut oil) and combine the mixture with your hands until nice crumbles form that resemble wet sand. Pop that in the fridge.
- Make the apple filling. Toss together the sliced apples, maple syrup, spices and bourbon and let the marinate in the bowl for a few minutes to soak up the flavors.
- Assemble the crisp. Add 1/3 of the topping to the bowl with the filling and toss it together. Place all of this into your prepared pan and sprinkle on the rest of the topping.
- Bake, cool & serve! Finally, bake the crisp on a baking sheet (in case the filling bubbles over) until golden brown. Let it cool and serve with vanilla ice cream for the ultimate treat!
Make it ahead of time
Yes, you can make this healthy apple crisp ahead of time! Simply prepare it as directed, cover your pan or skillet with foil, place it in the refrigerator and then bake it as directed before you’re ready to serve. Easy!
Store your leftovers
- In the fridge: store any leftover apple crisp in an airtight container in the fridge. Simply warm it up a bit in the microwave or enjoy cold straight from the fridge.
- In the freezer: yes, this healthy apple crisp is freezer-friendly! Assemble the apple crisp but do not bake it. Cover the crisp well with aluminum foil and transfer it to the freezer for up to 3 months. Bake the frozen apple crisp at 350 degrees for about an hour or until it’s golden and bubbly.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- For the topping:
- 1/3 cup whole wheat pastry flour (or regular flour or gluten free oat flour or almond flour)
- 1/2 cup old fashioned rolled oats, gluten free if desired
- 1/3 cup dark brown sugar (can also sub coconut sugar but brown sugar is best)
- 1/2 cup raw chopped pecans
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup cold butter or vegan buttery stick, cut into very small cubes (can also use coconut oil)
- For the crisp:
- 5-6 medium Honeycrisp or Granny Smith apples, peeled, cored and very thinly sliced
- 1/3 cup pure maple syrup
- 1 teaspoon cinnamon
- pinch of nutmeg
- 1 tablespoon bourbon (or pure vanilla extract)
Instructions
- Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan with nonstick cooking spray. Set aside.
- To make the topping: Combine the flour, oats, brown sugar, cinnamon, salt and pecans in a large bowl until well-combined. Add in the pieces of butter and use your hands to squeeze and combine until the mixture becomes crumbly and resembles wet sand. (Alternatively, you can cut in the butter with a pastry cutter, or place all of the topping ingredients in a food processor and pulse until just blended. My favorite method is to use my hands, as I believe you get the best crumbly topping that way.)
- Once finished, place topping in the fridge and begin making the apple filling.
- To make the filling: Place apples, maple syrup, cinnamon, nutmeg and bourbon (or vanilla) in a large bowl and toss to combine. Allow to sit for 5-10 minutes.
- Take 1/3 cup of the topping mixture and toss with the apple mixture. Place the apple mixture in prepared pan and sprinkle evenly with topping.
- Bake the crisp on a baking sheet (just in case the filling bubbles over!) for 45-55 minutes, or until topping is golden brown and filling is bubbling. Remove from oven and cool 10 minutes on wire rack. Serve warm with your favorite vanilla ice cream. Makes 9 servings.

Thank you for addressing the pain that so many people here feel. I’m Jewish, and I’ve spent a lot of time in Israel. I was so disappointed that so many American Jews–not by any means a majority, but something like 12% of American Jews–voted for Trump beause he made superficial campaign promises about defending Israel and taking an aggresssive stance toward Muslims. That sickens my heart, and this is going to be terrible for Israel, a place I know and love very much, as well.
I am curious if you still feel Trump made “superficial” promises to American Jews? I don’t ever recall a US President defending Israel the way Trump has. I don’t agree with all Trump does, but I feel there has never been a person to defend Israel and solidified its relationship with the US the way Trump has done.

I came to this page for recipes, if I had scrolled down before hand I would have went elsewhere. Thank you SO much for sharing this recipe. I’m adding to my ‘all time fave’ list. Since I’m gluten + dairy free, I made it as suggested using GF oats, almond flour and DF Earth Balance butter. I modified it a bit by doubling the topping (YUM!) and cutting the sugar and maple syrup in half. I serve it with DF vanilla almond or cashew ice cream. It’s divine! (I’ve made it twice this week!)

Kelly, when you day that you cut the sugar and maple syrup in half, do you mean for the topping or the filling or both? I was thinking maybe you just use the singular amounts of the sugar and syrup but double the rest of the ingredients in the toppping, but wanted to clarify. I am always looking for a way to make just a little bit healthier but still keep the same effect.

I made this once before and loved it so I’m making it again tonight for my brother in law’s visit. I guess I never noticed the political comments until now. Let’s see how open minded people really are :). I voted for President Trump because I felt our country needed a leader and I’ve been happy with his first 2 years. My boyfriend and I made this delicious healthy crisp last night for my birthday desert. It was so delicious (minus the candle wax that melted into the apples because I couldn’t wait for it to cool) and very fun to make together. It also cut the prep time in half because he peeled and cut the apples while i made the topping.
We chose to use Braeburn apples because they were on sale at the grocery store, but they ended up being the perfect crisp apple. They pack a punch of tang and sweetness and they are both crisp and soft. With the addition of cinnamon and maple syrup (no vanilla or bourbon is required) they were so perfect; My boyfriend was enjoying eating the mixture raw. As we were prepping the apples, we added the juice of a fresh lemon wedge, using just a little acidity to keep the fruit from browning. We use 6 large apples, and it was a lot, filled all the way to the top edges of the pan, but it was the absolute perfect amount. I wouldn’t want any different. And it didn’t overflow when cooking, and there was still enough room for the topping so there was no concern when all said and done.
I decided to double the crisp topping. I still used an 8×8 pan but I felt like more topping was needed. I used coconut oil in the topping, instead of butter, and I was overjoyed with the outcome. My boyfriend isn’t a huge fan of coconut. We use it in brownies for oil, but sometimes the coconut flavor is too overpowering. But in this recipe, the flavor totally cooks out, and with the combo of other ingredients you are left with a crunchy topping packed with maply sweetness. I am very glad I found this crisp topping, it is on the healthier side, and I feel like it can be versatile for other fruits crisps.
We cooked for probably a total of an hour to an hour and 10 mins. At 45 mins we covered with tin foil because the crisp was crispy enough but the apples were still a little too firm for my liking. Then we let rest for 30 mins with the foil off.
When we cut into it and scooped it out, the apples left all there juices in the bottom of the pan. It was a lot of juice, and it looked funny, but it didn’t change the way the crisp tastes. It is perfect. The apples stand alone, with just a little over a teaspoon of cinnamon and some maple syrup and lemon juice. Eating it makes me feel like I am clean eating and I am so happy to add this desert to my go to recipes.

I would not recommend coconut flour — however you could try almond flour or oat flour.

Okay… Ambitious kitchen is basically the only “cookbook” I use. I recently got married and started meal planning for my husband and I. When I was just cooking for me, salads with little protein did the trick for a healthy meal. But for my husband, he needs a bit more which overwhelmed me. And then a friend recommended ambitious kitchen! I am on this site so often looking at all the recipes. I’ve made a lot of them and they always, always satisfy. Some of my favs are: black bean tacos, turkey chili, and banana choc chip muffins! The apple crisp is a new favorite. It’s honestly perfect and so healthy in comparison. Sometimes I substitute the brown sugar for coconut sugar is we are being a bit more on the healthy side. Regardless we LOVE this stuff! And we love this site :).

Yummy! I used Granny Smith apples and left the peels on. I eliminated the nutmeg and used regular WW flour, because I didn’t have pastry flour. It was really good, but a bit too sweet for my taste. Next time I’ll reduce the sugar in the apples. Thanks!

I put 1/4c ice cream with a serving (just out of the oven) which made it even better……instead of the cinnamon/nutmeg as directed I used a premade Apple Pie Spice from a local spice shop which contains cinnamon, nutmeg, cloves, and mace. I also used all Granny Smith apples.
The serving size is just right and if I play my cards right I may be able to have another serving as a night time snack.

This was easy and really good. I needed to use up some apples, so I used a variety and this turned out delicious. The advise on slicing the applies thin was good advise . It baked up nicely. I did add half again as much cinnamon as my family really like it. Will make again, for sure.

DELICIOUS and SIMPLE! I made a few changes though. I added a squeeze of lemon wedge and handful of blueberries to the filling. After I let the filling set, I sprinkled a little cornstarch and mixed well. I also used a 9×13 pan, 45 minutes, broil for 2. I didn’t mix any of the topping in with the filling either. Found the recipe to be very dry and not bubbly at all. However, taste was pretty good, just seems like it was missing an ingredient in the crisp.
My recommendation is to use a juicy apple such as a honeycrisp and to make sure they are fairly thinly sliced. This will help with the consistency. You can also let the apples sit in the maple syrup for a bit before making the crisp! Another option is to add 1/2 tablespoon of apple cider vinegar for a juicier crisp 🙂
This is an amazing recipe. I love the flavor! I used imitation vanilla because I was afraid to use bourbon (didn’t have real vanilla). I will try bourbon next time.

Yum! Used stevia instead of brown sugar and added some molasses to the apple mixture (should’ve added to the topping in retrospect). Used oat flour and walnuts instead of pecans as I didn’t have those. Halved the recipe for just myself yum! So simple.

This is my first recipe of yours that I’ve made, and LOVE it. My husband and I have been gobbling it up every night. I take a dollop of Greek yogurt and he does a little vanilla ice cream. It’s SOOOO good. I could eat it for breakfast. I’ll def be trying more recipes 🙂

Replacing sugars with other sugars does not make something healthy.
Why rate something you haven’t tried?! Replacing refined sugar with lower glycemic options is in fact healthier, especially if you are diabetic. Also the recipe uses pecans to reduce the amount of oat topping. Made this for my type 1 diabetic husband and he loved it 🙂

This was so delicious – I have always loved apple crisp but stayed away for fear of the sugar content and other ingredients that I’ve chosen to avoid. I did substitute almond flour for the wheat and also used coconut oil instead of butter but that did not hurt the outcome one bit!

I made this for my MIL’s 82nd birthday party. She really liked it. My son thought it wasn’t sweet enough but I thought the sweetness level was just right. I added more spice because I like a lot of cinnamon and Honeycrisp apples. I used almond flour, butter, honey instead of maple syrup and vanilla instead of Bourbon. I also topped it with homemade caramel.

I made the gluten-free version of this recipe and loved it! I used vanilla and only drizzled a little bit of maple syrup on the apples as they were already very sweet. I doubled the crisp and used finely chopped pecans and almond flour. With a thick layer of crisp I had to use a fork and toss the crumbles a few times while it was baking to avoid the top being overdone. It was delicious with heavy cream poured over it. I will definitely save this recipe and try the different variations.

This was such a surprise. I was not sure about all of the pecans because I usually don’t like nuts in desserts but this gives the crisp the texture and buttery flavor it needs. I crushed them to be fine which I would recommend. This is the first time a “healthy” option is good enough to actually replace the original and may even be better!

And I also kept the peel on. Which added extra texture.

Yes to this!! I loved the topping. I used almond flour since I’m gluten free, and it was delicious and absolutely the right texture for a crisp. I used 1/2 Granny Smith and 1/2 Honeycrisp apples. I liked that the juice was not thickened and the apples did not lose their shape. I had to cook mine 10 minutes longer because I think I used more apples. (Mine were small so I doubled them up.) This will be my new go-to Apple Crisp recipe–and there is no reason why you couldn’t use other fruit, as well. Thank you!!

I don’t like apple desserts so I was very reluctant to do this recipe. I was pleasantly surprised on how easy it was and how delicious it turned out. I didn’t include pecans and the topping was still crunchy and delicious. Definitely a keeper. Will be trying it again next week as I have so many apples available! 😅

I have a question. For the Topping ingredients it says whole wheat pastry flour or you can use oat flour but then you have to use rolled oats as well. Does it make a difference in the recipe if you use oats in both cases I mean one liek oat flour but then one more time oats but rolled this time. What about the taste of it in the recipe?
Hi Maria, I’m just another baker, but I used to (years ago) only use oats in my apple crisp – and the flour was actually used to coat the apples. So I’m guessing just oat mixture on top would be great!
Hi! The recipe will still turn out well using oat flour + rolled oats because the oat flour is super finely ground (like whole wheat pastry flour).

Thank you for sharing this wonderful recipe. I happened upon it searching for low sugar but not keto apple dessert recipes. I love the perfect balance of tastes in this. I did do some alterations to use ingredients on hand and to add a bit more spice, but I wouldn’t have made this so wonderful without your recipe. I used regular whole wheat flour, non refined cane sugar, and vanilla instead of bourbon. I added about an 1/8 tsp each ground clove, allspice, and nutmeg and doubled the cinnamon in each component. I melted unsalted butter in the pan instead of using cooking spray. I used a food processor to mix the topping because I have problems with my hands. I expect it to be a yummy, comforting blessing to the folks I am about to take it to. Many thanks again!☺️

This was so good! Cooked perfectly and tasted wonderful. I followed the recipe almost exactly; I had to substitute walnuts for pecans and I left out the nutmeg because I didn’t have anything. Still tasted amazing but I’m sure the nutmeg would take it up even another notch. I served it with French vanilla ice cream topped with the peanut butter caramel sauce from a different AK recipe. Absolutely delicious!! Hands down the best, most perfectly balanced apple crisp I’ve ever made. Sometimes crisps can be overly sweet and sloppy, but not this one! Fruit-forward and not too sugary, this is a recipe I’m baking again and again and again…. Thanks, Monique!
I did make a few changes and substitutions based on what I had:
TOPPING:
– I used Alton Brown’s gluten free flour mix: https://altonbrown.com/recipes/gluten-free-flour-mix/
– Doubled the chopped pecans in the topping
– Coconut sugar in the topping
APPLES:
– I used 10 small McIntosh apples (that would have been thrown out at the school where I teach!)
– I tossed my apples with about 1.5 tsp of lemon juice since I prepped them far in advance
– Tossed 1.5 Tbsp of cornstarch with the apples before adding to a buttered 8×8; it helped the McIntosh apples hold their shape and prevented the juices from becoming too thin after baking
– Used BOTH 1 Tbsp bourbon and 1/2 tsp Trader Joe’s bourbon vanilla extract. I regret nothing.

Flavors were great, but it really needed to be covered with foil. After an hour of cooking, (without being covered) the apples turned leathery and weren’t evenly moist. . I covered with foil and baked it for another half hour and it came out ok, but wished it was covered with foil from the beginning.

Delicious but the filling needs something like cornstarch or a bit of flour to help make it less soupy. However to be fair I chose not to mix any topping in with the filling so that may have been the problem.
Yes I think that mixing in some of the topping would help soak up some of the filling’s juices. Happy you enjoyed it, though!

I have been using a favorite crisp recipe for years and thought, why not try this for Thanksgiving? I was prepared to be a bit disappointed, but I love this!! I made it with Granny Smith apples, almond flour, real butter and vanilla (because no bourbon in the house). The flavors and crunchy topping are amazing and this is my new favorite recipe.
I did have to leave it in the oven for 60-70 minutes until the apples were soft.

I did this with gluten free flour and vegan butter and thought it was fantastic, especially considering the dietary considerations! I ended up doing four apples (because that’s what fit in my dish) and the same amount of topping and thought it was great; I’m personally a sucker for the topping.

Delicious recipe but I used Cortland apples, cut down on the maple syrup and it took every minute of an hour to cook. The Pecan flavor was a great change. I question the ability to serve 9 people with this recipe. I used 5 average apples and it only served 4 people of about a cup each. Definitely a new and healthy take on crisp.

I used date sugar and muscovado sugar for the topping. Since we like walnuts better than pecans I used that instead. Also we added fresh blackberries. Since I was low on butter but needed to use my ghee I used that instead. It’s delicious. My second time making this recipe.

Oh my gosh…. I adore apple crumble but this has to be the best I have made so far, and I could even eat it with my gallstones! Just used cheap vanilla flavoured essence but still amazing. Instant favourite.

We all liked the taste…mildly sweet finished product, a little crunch, and let’s the apple flavor shine. But there was too much runny liquid in the pan. I didn’t want to bake it longer because the topping was fairly browned already. Maybe I added too many apples as I was using the small snacking sized apples and just doubled the amount to come up with an equivalent medium apple size. What can I try next time to thicken/evaporate the liquids?
Delicious! but i recommend doubling (or tripling) the topping. I used margarine instead of butter and omitted the maple syrup since my apples were already fairly sweet and I am sensitive to too much sweet.

Absolutely delicious! Wish I had taken a photo before diving in because all but one piece was remaining! I did not alter ingredients except we watch our sugar intake so I used alternative no-sugar maple syrup and no-sugar brown sugar and it was extremely tasty. I used the bourbon and would love to know how I can get even more of that flavor into the recipe. Soak apples longer? Soak pecans? Or? Suggestions?
So glad you loved it! You could try adding a bit more to the apple mixture and let it soak a little longer. It will mostly bake off but that might boost the flavor a bit!
I really love this recipe, buge fan of apple crisp and this is in my 5 star collection now! Very sweet, but that’s not a bad thing, depending on my mood.

This is fantastic! Before making it, I was worried if this was going to be sweet enough considering it is a healthier version. It was the PEFECT amount of sweetness. Not too sweet and not too little. My family devoured it. My kids absolutely loved it. We will be repeating this recipe over and over again.
