I’m heading to Boston next week for a 5 day vacation. I literally cannot wait! I’ll be visiting my good friends from Australia; we’ve kept in close contact over the years and try and visit every so often.
Boston has great weather this time of year, too! I’m excited to check out some restaurants and explore a bit so definitely let me know if you have any suggestions!
I also have a new obsession to share: Banana bread breakfast cookies. Normally I would say regular cookies, but since these taste like banana bread AND oatmeal, I’m really quite in love. And when chocolate chips are thrown in the mix? OMG!
Plus they only take 15 minutes to make and clock in at around 60 calories per cookie. YES!
This really isn’t even a recipe. It’s me telling you to mix two things together for sweet satisfaction that you don’t have to feel guilty about.
For reals. No weird processed ingredients from a box. Just all natural stuff.
Dairy free. Gluten Free (use GF oats). Nut free. Vegan. Vegetarian. I think they’re a good breakfast (or healthy treat!) for whoever you are. That is unless you’re allergic to bananas or oats. Sorry!
The possibilities are endless with these little bites! Try adding in some of the following to make it your own:
- vanilla extract
- vanilla beans
- chocolate chips
- peanut butter chips
- peanut butter
- nutella
- butterscotch
- dried cranberries
- raisins
- chopped walnuts, almond or pecans
- coconut flakes

2-Ingredient Healthy Banana Bread Breakfast Cookies {with add-ins!}
Ingredients
- 2 large bananas, mashed
- 2 cups gluten free oats
- If desired you can add in some of the following:
- vanilla extract
- vanilla beans
- chocolate chips
- peanut butter chips
- butterscotch
- dried cranberries
- raisins
- chopped walnuts, almond or pecans
- coconut flakes
- cocoa nibs
Instructions
- Preheat oven to 350 degrees F.
- Place oats in blender or food processor and blend until oats become the consistency of flour; it's okay if it's not perfectly ground.
- In large bowl combined mashed banana with oats until smooth. Add in 1/2 cup of your favorite add in; I used dark chocolate chips and a teaspoon of vanilla extract.
- Spray baking sheet with nonstick spray. Drop dough by large tablespoons onto cookie sheet; flatten a bit with a rubber spatula.
- Bake for 9-12 minutes or until cookies are set. Remove from oven and cool on wire rack. Cookies will keep in a covered container for a few days, or they can be frozen and reheated. Makes about 16 cookies.

If you are going to Boston my suggestions are a duck tour which leaves from the Museum of Science (also an awesome option) and for food going to Parish Cafe on Boylston. It was our favorite restaurant when we lived there and all the chefs of Boston make sandwiches for them. They also have a great beer selection. If you’re heading to the South End Stella was one of my favorite restaurants! Also Legal Test Kitchen or the New Mexican place in the seaport called Tezmecal I believe. It was incredible with great views! Have a great time!

Oh…forgot to ask…could one use oat bran instead of the oats reduced into flour?….Son d’avoine in French..it is less glycemic…and even friendlier for “form”!!
Made this today and am enjoying one right now. Grandkids will like them also. Tasting. Added walnuts and dark chocolate sprinkles. Next batch I shall add peanut butter powder. Yummy.

Wow! Super easy and I’m sure super tasty. I’ll have to try them this weekend. Boston is fabulous! I was there last October and did have a couple of great (calorie laden) meals! I can’t remember names, but be sure to try Lobster Mac N Cheese. Lots of places serve it and the couple I had were delish! (I just went to Providence and their mac n cheese did not compare.) Any place in Little Italy – you won’t be sorry. Have a great trip and visit with your friends!

For brunch, I’ve long been partial to the North Street Grille in the North End (on North St – go fig). Masa in the South End on Tremont has a great brunch as well.

I 2nd the DUCK tour. I know it sounds corny but you get a great lay of the land and some great history all while having a lot of fun cause the drivers are great! Then you can go back and do the neighborhoods you want to see more of. You can also grab the DUCK at the mall next to the Prudential building.
The “Barking Crab” was a great dinner. Picnic tables all set up under a roof on the water – meet lots of great people.
Eating anything in Quincy Market/Faneuil Hall is a great people watcher.

I have lived in Boston my whole life and it is amazing, especially at this time of the year! Enjoy! As for recommendations….if you are looking for an incredible lobster roll, head to Neptune Oyster on Salem Street in the North End (crazy wait but they let you put in your name and will call your cell when the table is ready so you can explore the area.) Masa in the South End for breakfast as mentioned above is awesome!! And for some delicious Italian, I would suggest Monica’s Trattoria or Vinoteca di Monica, both in the North End.
For some laughs, get tickets to the Improv Asylum in the North End – so fun!
and since you may be dining in the North End after dinner goto Michael s Bakery and get a cannoli – best bakery ever………….and then maybe walk that cannoli off with a tour of Paul Revere’s ride……have a blast

Could try using super ripe banaas
There wasn’t enough banana for the flour even though they were huge. So Added peanut butter. They didn’t look done so flipped them and baked another five minutes. I tasted and they were dry and bland. I will eat them with honey and milk. I’m not wasting my 2 last bananas. :/
I take it back…I may not be able to eat them. They’re awful. You wasted my last 2 bananas. I can’t get enough saliva keep it from globbing up like dough in my mouth. Do you people not have taste buds?
Kathy what are you talking about? what are you 80 years old that you can’t make saliva while chewing them? They’re perfect I love them and my whole family loves them. How about you go back to eating oreos or something.
When you taste buds are still set to the level of other sweets and carbs these aren’t going to be as delicious. With very little to no other sweets in your diet these are good.
As for being so dry, maybe you didn’t measure your oats correctly, or your bananas weren’t ripe enough, or you may live in a dry environment which would affect the outcome.
Easy enough to put in a dash of salt, maybe a tablespoon of sugar, and I used a couple tablespoons milk with the dry oats before adding the banana. If you don’t like the taste, season, or add the chocolate chips/add-ins!

I was all set on making your awesome vegan banana bread with chocolate chips when I saw this! Had my bananas mashed and oats freshly blended. Think I’m going to make this to change it up! The timing couldn’t be any more perfect.
These were great! I divided up my “batter” and made several different combinations. I think my favorite was adding peanut butter and dark chocolate chips. I mean really, how could you go wrong there? My 2 year old loves these for breakfast. Thanks for the great idea!

These are AWESOME! I made a batch with chocolate chips, vanilla, and cinnamon. Then I made a second batch for a friend with maple, brown sugar and raisins. Very yummy!

I had the same result, I wasn’t even sure they were ready after 11 mins but I couldn’t wait longer thinking they will get even more dry :-/. I used nutella in half the mix and vanilla and walnuts in the rest. Still not sure, I like healthy recipes but this one is really missing something…

I originally made these with just the two ingredients because that was all I had on hand. They were good. The next day I went and purchased chopped walnuts and some raisins and made another batch and they were even better. SO healthy! Thanks for posting!

These were awesome. I don’t like oatmeal, bananas, craisins or dark chocolate — but when I mixed them all together, it was a slam dunk! Now I feel like I can get all of those good super foods in a yummy cookie. Also, since we just moved to Rhode Island, I am appreciating all of the Boston recommendations from the comments!

It was the vanilla extract I used. I just smelled it & it has a chemical smell to it 🙁
Even with the with the addition of chocolate chips they were pretty bland. The recipe could benefit from a dash of salt and a little sugar (I should have known). I will try it again with these additions, in the future.
Thank you very much for the excellent cookies, I just made them,oats, bananas and chocolate, cheap and easy, I added peanut butter, vanilla sugar and brown sugar (a bit of both) and I put the oats without blending it, delicious! Next time I will not put any sugar and will use a bit of honey instead to make it healthier and sweeter. Thanks to you I will bake those very often, it also has the advantage of being not dairy, and very nutritious when there is no time to eat breakfast!

I just made these. They just came out of the oven and they are chewy, lovely, chocolate banana-y goodness. Seriously the easiest, fastest thing I've ever baked. I added chocolate chips, a splash of vanilla extract and a dash of salt in mine. ( I also used regular oats instead of gluten free.) and instead of cooking spray, I greased my pan with coconut oil which really complemented the flavor I might make more later today!
So basically you do not need to add oil in the mix at all? That’s not gonna make the cookies dry, is it?

Made half the recipe with 1/8c brown sugar, 1/4 raisins, and quick oats (straight from bag). Delicious, however next time I will be sure to smush the "dough" down a bit for each cookie prior to baking, as they don't flatten much and I'd like mine a bit more crunchy on the outside.
These sounded so good, but sadly no one here cared for them. I made them plain, so that might have been part of it. I ended up putting them back in the oven @250 for a couple of hours, drying them out into dog biscuits which were a hit.

These came out fantastic. I added teaspoon of brown sugar, pinch of salt, and added cinnamon to the oats before blending. I made bars. Cooked 12 mins.
I used 3 ripe bananas instead of 2 ( to add sweetness and more banana flavor) and used the suggested amount of oats. I also added about a half a teaspoon of salt, vanilla, cinnamon, and frozen blueberries, and they were amazing! Definitely more chewy than normal cookies but so tasty and just the right amount of sweetness. A wholesome, healthy snack 🙂 Thanks for the recipe!!
I wonder if I could substitute coconut flour for the oats? I don’t have oats, but I have 2 really ripe bananas and coconut flour that I need to use up…….
Mine turned out too dry. Maybe bananas should have been more ripe. They were thicker too. I may add a pinch of salt. Something was missing. My add ins were coconut flakes, chocolate chips, honey, peanut butter vanilla extract – not much of each.
Honestly my 17 year old said they were rubbery. I think I need to try again.

Oh my goodness these are delicious! My kitchen smelled so yummy while they were baking too. I added some vegan mini choc chips, vanilla, a little unsweetened coconut and a tsp or so of honey. So good!

That’s a bummer as many people love this recipe! Did you use extra ripe bananas? If you did and still didn’t find the recipe appealing, I would suggest adding a little maple syrup or coconut sugar to the batter.
I just made them with raisins and vanilla extract. they are nasty and very dry so I added some milk and sugar with cinnamon and now theyare the as bad but still kinda gross and dry. I love the idea but my husband and kiddos are just not having it.
That’s so odd. Were your bananas large and ripe? Someone just told me they made them 3x this week so it makes me think you may not have had ripe or big enough bananas.
These are delicious and easy to make. My 4 year old daughter and I made them and used the suggested quantities, with a teaspoon of vanilla and a tablespoon of nutella. They would be fantastic with blueberries. Thank you 🙂

Add-ins were 6T almond butter, 1 c. chopped walnuts, 1/3c. cocoa nibs, 1/2 t. salt. Then I divided the batch and added 1 c. chopped dehydrated apple (with the peel) to one part and 1/2 c. craisins to the other. Both versions came out really well. No added sweetening or flavoring at all. New name, though, is Stone Soup Cookies. ?

It took me a few times to get these right. The first couple of times they were only tolerable, but I keep tweaking them and they keep getting better and better. I usually just make them with cinnamon, nutmeg, vanilla extract, and a little bit of almond extract. Last time I ground up a couple of cloves and that was delicious. I also ground up some unsweetened coconut so that my boyfriend who claims to hate coconut wouldn’t notice and that was really good too. Coconut oil is my favorite for greasing the pan.
I added sunflower seeds and chopped strawberries. Delicious!

I’m pretty late on this but I made them this past weekend! They weren’t perfect, I need to play around with the measurements more. My mistake was that I didn’t see the part where you blend the oats first to make a flour, so I just put straight up oats in there. I made a big batch because my bananas were about to spoil (5 of them) so I did 5 medium bananas, 2 cups of oats and then some oat flour (I had both at home) just to get the consistency right. I mixed that together and got pretty much the same consistency as making chocolate chip cookies (the ‘real’ way).
Then I added in chopped dark chocolate (didn’t have chips, but I had a bakers bar), chia seeds, and a few handfuls of chopped pecans. I baked them long enough to try to get them crispy but it never happened – they came out chewy, probably because of the oats. They *taste* great though, they really feel like a dessert so it’s stopping me from having richer desserts because I know I have these at home. 🙂 I just wish I could get them to crisp up. I’ll try using the oat flour next time instead of oats and see if it makes a difference. If you have any tips besides that to get them crispy, I’d love to know!

I so wanted this recipe to work of us. My husband cannot have gluten, most grains, eggs, dairy, nuts, and more. I am a big baking fan, and have been missing baking. So, I’ve been trying to look for recipes that he can have (no fun in baking something that he can’t have too), which is, I have discovered, next to impossible.
Hence my high hopes for this recipe that was recommended to us. Well, it did not work at all for us.
My bananas were very very ripe, I used 3 medium, instead of the 2 large ones indicated in the recipe. Added a tiny bit of sugar, and vanilla. And did half a batch with raisins, half with dark chocolate chips.
They were extremely dry. Quite bland. Such a shame. I wonder what went wrong.

I make these for my small nephew, I add around 20gr of muscovado sugar (parents prefer low sugar recipes and this kind of sugar), and parents are fascinated. The kid loves them! I add around 50gr of raisins which he loves, and done. Simple, fast, healthy and delicious 😀
I made these last week, and I love them. I went with the chocolate chips )actually, chopped Hershey dark kisses) and vanilla add in option. The chocolate gives them just a touch of sweetness but they are not to be considered ‘sweet’ at all which is great for those looking to reduce sugars. If you like sweet, I would recommend some maple syrup, honey, or good ole sugar. I can see making these regularly with the same or different add ins. 3-4 of these make a great breakfast on the run and they freeze great. I can pop them in the micro for 30 seconds to kick the frost off and eat them in the car on the way to tennis. I used 4 bananas, 1 cup oat bran, and 2 cups of the oats blended into flour. Super easy, healthy, and satisfying breakfast. Thanks!

TEXTURE? Are these supposed to turn out sort of chewy and a strange texture? Almost a little bit rubbery? Maybe I did something wrong. The flavor was great but the texture, my kids wouldn’t eat them. I have tried this recipe twice and both times the texture was not what I expected. First recipe was mini chocolate chips with a teaspoon of vanilla. Second recipe was raisins, vanilla, a dash of cinnamon and I put a little cream cheese frosting on the top after baking. Like I said, flavor was great but not the texture. Maybe I am just picky about textures.
Made these with very ripe bananas that were in my freezer. Did not over bake, no eggs no reason to over bake the texture was very nice. These will be regulars for me.

Did you already spray the parchment paper with oil? Or try adding in a couple tablespoons of your favorite healthy oil to the batter, like coconut oil! 🙂
I know this recipe is from 2013 but I just wanted to let others how I made them!
I couldn’t be bothered turning on the oven, so I turned to the handy dandy airfryer, since they’re all the rage these days!
If your bananas aren’t ripe enough you can add in some maple syrup, agave, honey etc. I halved the recipe and used 1 banana + 1 teaspoon maple syrup, threw in 1\2 teaspoon of cinnamon, a dash of vanilla and 1\4 cup of raisins that were soaked in hot water for about 10 mins. (If you ever add raisins to your cookies, you should try soaking them first! The texture is so much better). For the oat flour I only blended up 3\4 of of and then added the last 1\4 cup as whole oats for more texture.
I put parchment paper in the airfryer basket sprayed with a little coconut oil and flattened the balls, baked for 12 mins at 330F (since airfryers cook with more concentrated heat) and they turned out great! Crispy edges with a banana bread like center 🙂
Also if your batter seems dry you can add in a little yogurt or milk if you don’t wanna use another banana.

I tried these on a whim because I had 4 very ripe bananas. I love it’s two ingredients! I added dried cranberries and vanilla extract. They came out a little chewy cooking 12 minutes. Amazing and super easy! Great pre-workout snack for lasting energy. Great dessert when your sweet tooth comes knocking. Especially great fresh out of the oven. I used a little vanilla and chocolate chips, per the recommendation. I left the oats chunky by using a mortar and pestle (not because I’m hardcore about natural cooking, but because I didn’t want to have to wash my food processor!! :D) and they came out looking like traditional oatmeal cookies.
Disclaimer – if you want an oatmeal cookie like your grandmother used to make, this isn’t it. But it’s a delicious and simple substitute for vegans, people wanting to eat healthier, or people who don’t want to measure a lot of stuff when they make cookies!

Thought this would be a good recipe.. it was easy(although the dough was dry) had to add yogurt. It tasted bland, it may be a two igredient recipe but the title deceives it isn’t tasty at all.. I won’t be doing this recipe again.

Hi. These are awful. I used 4 bananas with double the oatmeal and added vanilla. Yuck. They didn’t brown up no matter what and they tasted very bland. What a waste of time and effort.
These turned out really good using the chocolate chips and vanilla extract as my add-ins. I’m not sure why anyone would not like these if they like bananas and oatmeal – but I think it was key to have really ripe bananas for added sweetness and to eat them expecting a light and fluffy cookie. These are definitely a solid cookie and they turn out best if you flatten them a bit as the instructions state. I tossed them in the freezer and when I get hungry in the morning between breakfast and lunch or need a little sweet snack in the afternoon or evening, they are awesome and really satisfying. Play with the add-ins and you can’t go wrong for a healthy alternative to the junk on the store shelves! Nice addition to my healthy recipe file!

I made these as directed, adding only dark chocolate chips. The flavor was good, but the texture was kind of rubbery… anyone know what causes that or how to crisp them up?
Sure. Add a bunch of sugar and fat. But that’s not what we’re going for here.
These a awful. My girlfriend made these for a work party and they taste like cardboard. I would definitely add something to them because they are not goIf.
Hi,me and my daughter tried the banana oatmeal cookies. Add in was vanilla essence. Used 2 ripe bananas and 1 cup oats. Baked for 15 mins. The cookies were soft…..Not hard. What did I miss?

This is a good way to use up an over ripe banana, and a good way to curb your sweet tooth without feeling guilty! Loved it!

I wouldn’t recommend it – the consistency will be much different using the cereal!

I haven’t tried it, but I think that should work! You might just need to add a bit more mashed banana if the dough is looking dry.
so easy and perfect for breakfast! I used one cup oats and 2 small bananas. I didn’t have much for add ins, but I found some oatmeal topping packets from starbucks (where i work) which has chopped dates, almonds, pumpkin seeds, and cranberries. I also added a bit of cinnamon and a teaspoon of honey. I made a cross hatch like peanut butter cookie style and cooked them for 10 minutes. Then I broiled them for a minute and a half to make the top crispy. My boyfriend (not vegan) ate them all with me! easy to eat them all since they aren’t too sweet and they’re a filling, nutritious breakfast with a cup of almondmilk.

Would it help to add a little baking soda or powder? I’m going to try a half tsp in a batch, afraid of getting a soda taste. But this recipe needs a little leavening, just a touch. And a little salt to bring out the sweetness.

Don’t use cooking sprays! Most have trans fats that are causal when it comes to heart disease. Use a little bit of coconut or olive oil as others have said for the “non-stick” aspect of the cookies.
I found this recipe through google. Used 2 HUGE bananas to the oats. Turned out great. Used Enjoy Life chocolate chips. I plan to top with some PB2 for some added protein and carbs.

Guess these would be great for diabetics. I thought they tasted pretty awful and that’s with adding a little peanut butter and a few semi-sweet morsels. Definitely won’t make them again.

Made these today with 2 med overripe bananas, 1 1/2 cups oats, 1 T crunchy peanut butter and barely 1 cup dark chocolate chips. I sprayed the cookie sheet with cooking spray, baked them 10 minutes 350 degrees and we live at high altitude. The Ghirardelli dark chocolate chips are what make this cookie. I’ll make them again.

This looked like a simple recipe I could create in my Bachelor Pad but I overestimated my kitchen. I don’t have a fancy food processor so I tried to be MacGyver and us the only thing I had that resembled a processor–a hand-cranked egg beater. Epic fail. It’s a shame too because these look really good. Besides being a newly-diagnosed diabetic, I’m also unemployed and lacking a car, so my options are EXTREMELY limited.

As a pregnant mom of an occasionally breastfeeding 13 month old, having healthy, easy to make breakfasts and snacks that are good on the go is very important. This recipe was PERFECT! Very easy to make, filling and delicious! I added homemade almond butter and some dark chocolate chunks and it was wonderful! I saw several comments that said the cookies were dry so I added slightly less than 2 cups of oats and they came out great. My daughter and I can’t get enough! Thank you for this recipe!!

I just made these and they are delicious! I added in an extra banana (so, 3 large, very ripe ones) & 2 c. quick oats that I DID NOT blend into flour. I added in 1 tsp of vanilla, 1 T of peanut butter (could have used more, as I can’t taste the peanut butter) and on a few of them I placed raisins. I baked them at 350F for 15 minutes. They are chewy (some may say rubbery, but not overly so). I have another batch in the oven now – to the above I added a pinch of salt and several shakes of cinnamon. We shall see!! Gummy! I can’t believe I actually thought this would work without a rising agent. Also, they NEED some add ins or they won’t taste like anything. I used vanilla extract, almond extract, cinnamon, a dash of nutmeg, and cranberries. Do whatever you want, but do something. They’re edible, but next time I’m trying 2.5 tbsp baking powder and hoping for a better texture!

nobody liked them, adults or kids. they don’t spread when baked as there is no fat. If you had to make them and eat them, and they were the last thing you had in the house, then fine. They will keep you from starving.

Thank you for this quick and easy to use leftover ripe bananas. I made a half batch and made half with chocolate chips, which is good for chocolate cravings. The other half turned out tastier with vanilla, walnut, raisin, cinnamon. I also added a half teaspoon of maple syrup and a tiny pinch of salt to that half. Cheers!

Thank you for this recipe. I was looking for a recipe to get rid of over-ripe bananas and the other sites I visited all called for using quick oats. Yours was the only one I found that uses regular oats (and calls for blending them so they cook quicker, which is inspired). I was a little dubious at first, when I tasted the uncooked “batter,” since it was barely sweet. But after baking the banana sweetness really comes thru. Coupled with chocolate chips, it was perfect. This recipe was not very good. I followed the directions exactly as all I had was oats and banana. The cookies came out rubbery and not very pleasant tastewise. It’s not a hard recipe so I’m pretty sure I didn’t mess it up.

I didnt have such a great experience with theses cookies. I added vanilla extract and a bit of chocolate. I used overripe bananas and followed the instructions exactly. Idk mine came out really chewy almost like rubber. I believe in second chances so ill try it once more with some modifications.
Omg I managed to mess up the simplest recipe 😂 used two bananas to 1 cup oat flour and they came out wayy too soft. Oh well, I’m standing in my kitchen defeated eating on them. At least they’re still tasty.

Working backward from the calories, it looks like you had about 410 grams of banana. So your bananas were indeed huge! I definitely want to try this recipe, so my plan is to use 205g of banana to every 1 cup of oats (and for now I’m assuming they were rolled/old fashioned oats). Can’t wait to try them out!

These were very bland and dry. I used two overripe bananas so I was shocked that I couldn’t even taste the bananas. I think an update to the recipie to provide a volume of the banana mash would help ensure a proper ratio.
Honestly I’ve had bowls of plain quick oats with hot water, a banana, and a sprinkle of walnuts that tasted better then these cookies. We tossed the whole batch because even with a drizzle of honey on top the cookie texture was dry on the outside with an unpleasant cold doughy interior.

These are not good. I added a tsp of cinnamon, tsp of maple syrup, raisins and chopped walnuts. They are tasteless and dry. I’ll stick to my favorite AK recipe of banana chia bites. They are fantastic!

All I have to say is that there’s got to be better tasting options out there for leftover bananas. These cookies are tasteless and a bit mushy but yet dry! I didn’t know that was possible, but alas it is!

I was excited to find this recipe as I had 4 large overly ripe bananas to use up. I followed the recipe measurements and instructions exactly (doubled the batch) and even added chocolate chips and walnuts for sweet and crunchy add ins but they weren’t what I hoped for. It mixed up well in the bowl but there was a starchy taste in spots that wasn’t offset by the add ins as I was expecting.
So disappointed that I have to find another treat to take to our football potluck on Sunday.
Just to clarify -I did blend the fresh oats and bananas separately first and texture of each was nice and I added vanilla to the banana before adding the oats but I don’t know what to do to make them edible for a crowd that always raves about my desserts. They look great but the taste was not good, unfortunately.
Hi Ann – Few questions for you. What type of oats did you use? It sounds like they might have been bad? Also, over mixing can cause oats to have more of a starchy taste as well. Sorry these did not turn out for you.
These are very Bland. I added chocolate chips and vanilla and that is all that saved them from being thrown out. Even after being cooked they are not appealing looking. They do not turn a golden brown or change color. They look Gray. Taste is OK but not something that i would be willing to serve to guests on Card night.
